1 egg
2 cups brown sugar
1/2 cup butter
2 tbsps. molasses
1/4 cup brandy
1 1/2 cups all-purpose flour
1/2 cup raisins
1/2 cup glazed fruits
1/2 cup cashew or pili nuts
2 tsps. baking powder
1/8 tsp. cinnamon
1/8 tsp. all-spice
Procedure:
Soak fruits and nuts in 1/4 cup brandy for a day. Add 3/4 cup flour and set aside. Cream the butter with the sugar and add the eggs one at a time. Add molasses, brandy, cinnamon, and all spice. Add the baking powder and blend in the remaining 3/4 cup of flour. Fold in the fruit and flour mixture. Set aside.
For the light fruitcake
4 eggs
1 cup brown sugar
1/2 cup butter
1/4 cup orange juice
1/2 tsp. irange extract
2 tbsps. brandy
1 1/2 cups all-purpose flour
1/2 cup raisins
1/2 cup pili nuts
1/2 cup glazed nuts
2 tbsps. brandy
2 tsps. baking powder
Procedure:
Soak fruits in the brandy for a day and add 3/4 cup flour. Set aside. Cream the sugar and butter. Add eggs one at a time. Add baking powder and the other half of the flour. Blend well. Add lastly the fruits and flour mixture. Prepare 7 x 3 fruitcake pans and line with brown paper. Place cardboard in the middle of the pan and put one half of the dark and other half of the light fruitcake. Remove the board and put nuts for decor. Bake at 300 degrees for 1 1 1/2 hours.
